PIZZA W/ KIEF SPICE
Cannabis Infused Pizza Dough
1 cup warm water (110 degrees F/45 degrees C)
1 Tablespoon dry yeast
1 Tablespoon white sugar
Combine warm water, yeast and sugar in kitchen aid mixer. Use whisk to dissolve all granular bits. Set aside and allow to become frothy (5 to 10 minutes)
3.5 cups unbleached all purpose flour
1 teaspoon salt
3 Tablespoons infused olive oil
Mix all in dry ingredients using the hook attachment. Allow to start mixing on slow speed and once the mixture begins to come together, add the infused oil. Once the oil begins to incorporate switch mixer to speed 2 or 3. Mix for another 2 to 3 minutes or until the dough begins to begins to pull away from the side of the bowl and slap around.
Pull the dough into a loose ball. Brush with olive oil (this will keep dough from sticking) and cover with towel. Allow dough to rise for 15 minutes or until it is nearly double in size.
Oil the pizza pan and roll/stretch the dough to the shape of the pan. Par bake the pizza for 15 minutes at 350ºF.
1 cup marinara
3 cups shredded mozzarella
1 Tablespoon kief spice
15 slices pepperoni
Pull out of oven and brush infused oil onto pizza pie, including edges of crust. Spread pizza sauce generously over the pizza. Top with shredded cheese and then with kief.
Return to oven and bake at 350ºF for another 20 minutes (or until golden).
